Tugas & Tanggung Jawab
Food Safety Implementation & Compliance:
Ensure all food production, storage, and distribution areas comply with food safety standards (HACCP, ISO 22000, BPOM).
Conduct routine inspections and hygiene audits of kitchen areas, cold storage, and delivery units.
Monitor personal hygiene of food handlers and usage of PPE.
HACCP & Risk Control:
Develop, implement, and review HACCP plans tailored to specific client needs (mining, hospitals, factories).
Identify and control critical control points (CCPs).
Ensure proper calibration of equipment (thermometers, chillers, etc.).
Training & Awareness:
Provide food safety and hygiene training for kitchen staff, cleaners, and logistics team.
Conduct refreshers on food handling, temperature control, allergen management, and pest prevention.
Incident Management:
Investigate food-related complaints and foodborne illness incidents.
Perform root cause analysis and initiate corrective/preventive actions (CAPA).
Report incidents and follow up with clients and regulatory authorities as needed.
Documentation & Audit Preparation:
Maintain up-to-date documentation Food safety manuals, Cleaning records, Temperature logs, Supplier food safety certifications, Prepare sites for internal and external audits, including client visits and certification assessments.
Harus punya keterampilan:
Computer literacy - MS Office applications.
Fluent in English (both speaking and writing).
Technical Skills:
In-depth understanding of food safety hazards (biological, chemical, physical).
Experience in implementing, monitoring, and auditing HACCP plans.
Knowledge of Good Manufacturing Practices (GMP), Sanitation Standard Operating Procedures (SSOP), Cold chain and food transportation, Environmental hygiene & cross-contamination prevention.
Capable of handling foodborne illness investigations.
Skilled in conducting internal food safety audits and preparing audit readiness.
